Spinach in Coconut Milk

This is a Tanzanian dish.

2 lbs. spinach, loosely torn
1 onion, diced
1 cup coconut milk
1 cup diced tomatoes
1 tsp. curry powder
salt
1 cup uncooked rice - cook according to package directions

Boil onion/tomatoes for 5 minutes.  Add spinach and coconut milk.  Bring to a boil, then simmer for 10-15 minutes.  Serve over rice.
