Cauliflower Souffle










Shown with Spicy Sweet Potato Fries

2 pounds cauliflower
1/3 cup milk
4 Tbsp. butter
2 tsp. mustard
dash salt and pepper
1/2 cup grated Parmesan

Cut cauliflower into florets.  Cook in boiling water for 15 minutes.  Drain.  Mix with milk, butter and mustard.  Sprinkle with salt and pepper.  Pour into baking dish, cover with cheese, and bake at 350 for 30 minutes.
